You can do that by selecting the "Summary" report and "Group By: Starting Hands" options in "View Stats -> Statistics". You can also filter for specific hands/ranges in any report using "More Filters -> Hand Values".

There is a PostgreSQL restriction on the number of columns in a table so you will need to restrict the number of custom columns which are cached to 1600. What Tinman9956 says is correct. For PokerStars you can only use two color ranges under "Item Properties" in the HUD profile editor and the default color will display for the ranges that are undefined.

PokerTracker 4 detects the title of the table window, which it matches with the information in the poker site hand history file, and it does not read from dealer chat at all.
