How would I go about seeing how many pairs I got in 1 session?

There are several ways -- you could use the Holdem Hand Range Visualizer in the Statistics section, you could use the Summary report and group by Starting Hands Holdem, or you could filter for your individual hands via More Filters -> Hand Values -> Holdem Hand Range Selector. They'll all work

I understand how to select one pocket pair. If I recall, with PT3 I cold see a report on one page that listed stats on a separate line for each pocket pair. How can I do this with PT4?

That's what the Summary report shows when you set it to Group By Starting Hands (Holdem).
