There is no difference in the way a Hud profile works on different sites, so you can do exactly the same for your ACR tables.
Selecting a profile at table at one site and making it the default via that table, won't make it the default for tables at other sites or table sizes, so you'll need to do that for each type of table where you want to use it.

Alternatively you can do that via the 'Profile Select' tab in 'HUD -> Edit HUD Options' in a more general or specific way so that the rule applies to all sites or table sizes as you prefer.
