I am trying to remove Notecaddy from PT4, but I still have the definitions packages from Notecaddy in PT4 (in the form of statistics), how can I get rid of them?
They made restoring my database to another computer way longer than it should have been,

At this time PokerTracker 4 doesn't forget those automatically but you can remove those by deleting this file:

C:\Users\{Windows Login}\AppData\Local\PokerTracker 4\Data\StatDefinitionsExternal.pt4

You can access your C:\Users\{Windows Login}\AppData\Local\PokerTracker 4 folder by selecting the 'File -> Open User Data Folder' menu item.

Juuuust to make 100% sure, deleting that file won't delete other custom stats I imported from the warehouse or created?

Your custom stats are stored in another file (StatDefinitionsCustomized.pt4).
